We are currently taking reservations for quarter, half and whole shares of yak. Price is $7.50/lb hanging weight, which includes cut and wrap. Hanging weight will vary by animal, but will likely be in the 450-500 lb range. Once everything is cut and wrapped, you can expect approximately a 60% yield from the hanging weight, so each animal yields approximately 270 lbs of “take home” meat. About half of that will be ground and stew meats, and the other half will be roasts and steaks.
Our yaks are raised on irrigated pasture composed of a diverse mix of native and introduced grasses and forbs, and finished in the fall on alfalfa and a flax block supplement. While yak meat is naturally high in omega-3 fatty acids, adding flax to a finishing ration has been demonstrated to lead to a higher proportion of alpha-linolenic acid, as well as a significantly higher concentration of total omega-3 fatty acids in the finished meat. We believe this results in meat of exceptional quality and concomitant health benefits.
